Crazy weather and Mushroom & Charred Tomato Soup..my style..

Mumbai weather acting crazy past couple of days...hot mornings to foggy afternoons to rains and thunderinggggg...really scary...lightning too..
Current weather is a bit cool in the evenings..so made soup. Its a very winter kind of soup and a complete meal in itself. Its my experiment with charred tomatoes in a regular mushroom soup. We had it with bread croutons also made at home with store bought bread....My husband has given it full marks. He says its worth posting 💕

Mushroom and Charred Tomato soup

Ingredients Prep and Recipe:
  • 10 to 12 button mushrooms...washed well and sliced
  • One medium sized onion chopped
  • 10 to 12 garlic cloves chopped or grated
  • 2 medium sized tomatoes cut in 2 preferably or threes 
  • Red chilli flakes 
  • Black pepper powder
  • Salt
  • Mixed herbs
  • Olive oil
  • 1/4th cup milk
  • 1 1/2 cup water (or more..depending on how thick you like it)
  • Greens of 3 to 4 spring onions
  1. In a pan take about 2 tsp olive oil. Add chopped onions and garlic and saute for 2 to 3 mins. Then add sliced mushrooms and saute till soft on medium flame and then on high till just before the burning point (do not burn them) They  will get a nice charred fragrance. Keep aside. 
  2. Place the sliced tomatoes skin side down in a pan with just a tsp oil (I've used non stick for all preps) cook on low flame turning sides till charred (as in pic). Let it cool and then remove the skin. (optional)
  3. In a mixie add 3/4th of the cooked mushrooms, all of the charred tomatoes, milk and water and blend till smooth.
  4. Pour this in a pan and bring to a boil. Add more water if required. Add the remaining cooked mushrooms too. 
  5. Add salt, black pepper powder, mixed herbs and red chilli flakes as per taste and boil for another min or so. It tastes great if bit spicy. 
  6. Pour in a soup bowl and garnish with chopped spring onion greens and chilli flakes.
Serve with garlic bread or croutons.
Recipe for croutons
  • Bread slices cut in cubes
  • Olive oil
  • Mixed herbs 
  • Garlic powder
Place bread in a wide non stick pan. I had rubbed olive oil on the pan. Keep turning sides as these toast quite quickly. Sprinkle herbs and garlic powder once half done. Toss the bread a couple of times till crisp.
Serves 2 if having only this for dinner, else serves at least 3 people.
