Mornings are the busiest time of the day, especially on working days..from tea to breakfast to lunchbox for office or school..its a routine for most from Monday to Friday..sometimes even Saturdays..
Sharing a recipe that not only can be given to your child in his/her lunch box, but can also be enjoyed by others in the family in breakfast..
Tried and tested or rather tasted recipe.....everyone at home loves it.
Saves a lot of time on a really busy day plus its healthy and home made.

Roti Rolls with pizza toppings.
- Choice of veggies is completely as per your liking: Onion/tomato/green capsicum/other (red or yellow) bell peppers/sweet corn*/mushrooms*/broccoli* etc.
- Chop or mince all the veggies. (how you prefer)
- In a pan take oil and stir fry the veggies on high flame for a few minutes. We do not have to cook them completely. Just to evaporate the moisture and crisp them a bit. Also raw might spoil or smell depending on the lunch break of your child.
- Switch the gas off. Grate cheese on it.
- Add red chilli flakes, mixed herbs and salt to taste. (cheese has salt in it, so add salt accordingly)
- Mix everything up and your filling for the roll is ready.
- Make chapatis using whole wheat flour. Apply either ghee or butter on the chapatis.
- Put a big spoon full of this mix on each chapati and roll as shown in the above pic.
Let the rolls cool a bit before putting in the lunchbox. They won't turn soggy.
Tomato ketchup can be given separately if required. ๐
* Please note: Stuffing made with just onion/tomato/peppers tastes great too. I usually make it this way when its for an ealy morning tiffin. It gets cooked in a jiffy. But if you do have time on your hands do try these options as well -
- Sweet corn - boiled before adding.
- Mushrooms - sauteed with a little fresh or powdered garlic and butter

This recipe comes without measured ingredients as it completely depends on the quantity of vegetables you use. Everything else that is cheese, herbs, chilli and salt all should be according to ones individual taste.
